- In a bowl, mix vinegar, garlic, ginger, chili powder, cumin, coriander, turmeric, paprika, salt, and a spoon of tomato paste to create the marinade.
- Toss in the chicken and ensure it is well coated. Allow to marinate for at least 10 to 30 minutes.
Cooking
- Heat oil in a pot over medium heat. Add the chopped onion and cook until soft and golden.
- Stir in the marinated chicken, coating it with the onion and spices. Cook for a few minutes until the chicken becomes opaque.
- Add a splash of water to prevent sticking, cover, and simmer until the chicken is fully cooked and the sauce has thickened.
- Taste and adjust flavors with additional vinegar or sugar as necessary. Sprinkle garam masala just before serving.
Notes
Let the vindaloo rest for 15 minutes for better flavor development. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for 2-3 months.
