Ingredients
  

Main Ingredients
  • 3 cups cooked chicken, chopped or shredded Use rotisserie, baked, or poached chicken.
  • 1 cup grapes, halved (red or green) Both grape colors work well.
  • 1 to 2 pieces celery ribs, finely chopped
  • 2 to 3 pieces green onions, sliced Or substitute with a spoon of minced red onion.
Dressing
  • 1/3 cup mayonnaise
  • 2 to 3 tablespoons plain Greek yogurt Optional, but recommended.
  • 1 teaspoon Dijon mustard
  • 1 to 2 teaspoons lemon juice Adjust to taste.
  • Salt and black pepper to taste
  • Optional: a pinch of garlic powder or celery seed

Method
 

Preparation
  1. Use a large bowl to combine chicken, grapes, celery, and green onions.
  2. In a separate small bowl, stir together mayonnaise, yogurt (if using), Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until everything is well-coated.
  4. Taste the salad and adjust seasoning with more pepper and lemon if needed.
  5. Cover and chill for at least 30 minutes to allow flavors to meld.

Notes

Serve on toasted bread, in lettuce cups, or with crackers. Store in an airtight container for 3-4 days.
