Ingredients
  

Filling
  • 2 to 3 cups cooked shredded chicken Rotisserie chicken works best.
  • 1 bag frozen mixed vegetables (about 12 to 16 oz)
  • 1 small onion, finely chopped (optional) Adds flavor
  • 2 cans cream of chicken soup (or cream of mushroom if preferred)
  • 1 cup milk (or half and half for extra creaminess)
  • 1 to 2 cups shredded cheddar cheese (optional) Mix into filling if desired.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Topping
  • 1 bag frozen tater tots

Method
 

Preparation
  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, combine the cream of chicken soup, milk, garlic powder, onion powder, cooked chicken, frozen mixed vegetables, and onion if using. If desired, mix in shredded cheese.
  3. Pour the filling mixture into a greased casserole dish and spread it into an even layer.
  4. Top with a single layer of frozen tater tots, lining them up in neat rows.
Baking
  1. Bake in the preheated oven for 35 to 45 minutes, or until the filling is bubbling and the tater tots are golden brown. If necessary, broil for an additional 1 to 3 minutes for more color.
  2. Allow to rest for about 10 minutes before serving.

Notes

For extra crunch, consider lightly spraying the tater tots with cooking spray before baking. This dish reheats well in the oven or microwave. Store leftovers in an airtight container for up to 4 days or freeze baked portions for up to 2 months.
