  • 1 pound Chicken breast or thighs, sliced into thin strips Thighs stay super juicy; breasts work if sliced thin.
  • 8-10 ounces Pasta (penne, fettuccine, or linguine) Use pasta type of your choice.
  • 2 tablespoons Butter
  • 2 teaspoons Cajun seasoning Start with this amount; adjust to taste.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • to taste Salt and pepper
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth (or water in a pinch) Helps to scrape up browned bits.
  • 1/3 cup Grated Parmesan Optional, for extra creaminess.
  • Chopped parsley, for topping Optional.

Method
 

Cooking the Pasta
  1. Boil your pasta in salted water and cook it until it is just tender.
  2. Save about 1/2 cup of pasta water before draining.
Cooking the Chicken
  1. Toss the chicken strips with Cajun seasoning, garlic powder, onion powder, and a pinch of salt and pepper.
  2. Heat a large skillet over medium high heat. Melt the butter, then add the chicken.
  3. Let it cook in a single layer as much as possible for about 3 to 4 minutes per side, until browned and cooked through.
Making the Sauce
  1. Turn the heat to medium. Pour in the chicken broth and scrape up the browned bits.
  2. Add the cream and stir, allowing it to gently bubble for a few minutes until slightly thickened.
  3. If using Parmesan, add it now and stir until smooth.
Combining Pasta and Sauce
  1. Toss in the drained pasta and stir until everything is coated.
  2. If the sauce feels too thick, add a splash of pasta water until it looks silky.
Final Adjustments
  1. Taste and adjust the seasoning, adding a tiny extra pinch of Cajun seasoning if desired.
