  • 3 cups Cooked chicken, shredded or chopped Rotisserie chicken works great.
  • 2 cups Bell peppers, sliced A mix of red and green is recommended.
  • 1 cup Onion, sliced Yellow or red onions are suitable.
  • 2 tablespoons Fajita seasoning Store bought or homemade.
  • 1 can Diced tomatoes with green chiles Optional but recommended.
  • 1 can Black beans or pinto beans Optional, but adds heartiness.
  • 2 cups Shredded cheese Cheddar, Monterey Jack, or a blend.
  • 1/2 cup Sour cream or plain Greek yogurt For creaminess.
  • to taste Salt and pepper
  • 1 lime Lime juice For a squeeze if available.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Spray a casserole dish with oil.
  3. In a large bowl, mix the cooked chicken, sliced peppers, sliced onion, fajita seasoning, diced tomatoes (if using), beans (if using), sour cream, and cooked rice (or tortilla pieces). Stir until everything is evenly coated.
  4. Pour the mixture into the casserole dish and spread it out evenly.
  5. Top with a generous layer of shredded cheese.
Cooking
  1. Bake for about 25 to 30 minutes or until the edges are bubbling and the cheese is melted with golden spots.
  2. Let it sit for 5 to 10 minutes before serving to help it set.

Notes

This casserole is flexible; you can adjust to your taste by making it spicier or creamier. It also does well when prepared ahead of time.
