  • 4 cups cooked chicken, shredded Rotisserie chicken works well.
  • 4 cups broccoli florets Fresh or frozen, cooked just until tender.
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup sour cream or plain Greek yogurt For a lighter feel, use Greek yogurt.
  • 1.5 cups shredded cheddar cheese Can use a cheddar blend.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice Optional, adds brightness.
  • 1 cup buttery crumbs Optional topping, can use crushed crackers mixed with melted butter.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Prepare the broccoli. If using fresh, steam or microwave until bright green and barely tender. If using frozen, thaw and pat dry.
  3. Layer the chicken and broccoli in the baking dish, with broccoli on the bottom and chicken on top.
  4. In a bowl, combine cream of chicken soup, sour cream (or Greek yogurt), half of the shredded cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Pour the sauce over the chicken and broccoli and spread it out gently.
  6. Top with the remaining cheese and, if desired, the buttery crumbs.
  7. Bake for 25 to 30 minutes, until hot and bubbling. Optional: broil for 1 to 2 minutes for a browned top.

Notes

Do not overcook the broccoli before baking. You can prep the ingredients ahead of time or assemble the casserole to refrigerate for up to 24 hours before baking.
