  • 2 cups cooked rice (white, brown, or wild) Use leftover rice if available.
  • 2 cups shredded rotisserie chicken A great shortcut to enhance flavor.
  • 3 cups broccoli florets Fresh or frozen, if using frozen, thaw first.
  • 1 can cream of chicken soup Substitutes can include cream of mushroom, gravy, or homemade sauce.
  • 1 cup shredded cheese (cheddar or your choice) Mix cheeses for different flavors.
  • 1 cup milk Add more if casserole seems dry.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli florets, cream of chicken soup, shredded cheese, garlic powder, onion powder, milk, salt, and pepper.
  3. Mix until well combined and the broccoli is evenly distributed.
  4. Transfer the mixture into a greased baking dish.
Baking
  1. Cover the baking dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes until the top is golden and bubbly.
Serving
  1. Let the casserole rest for a few minutes before serving for better slicing.

Notes

For additional flavor, you can swap the cheese for pepper jack or sharp cheddar, add peas or carrots, and bake covered for the first part to ensure moisture.
