Ingredients
  

Main Ingredients
  • 2 cups old fashioned oats For the classic chewy bite
  • 1/2 cup honey The glue that holds everything together
  • 1/2 cup nut butter (peanut, almond, or sunflower) Makes them soft, rich, and filling
  • 1 pinch salt Enhances flavor
  • 1 teaspoon vanilla extract Optional, for added flavor
Mix-Ins
  • 1/2 cup mini chocolate chips Add for extra sweetness
  • 1/4 cup chopped nuts or dried fruit Optional for additional flavor and texture

Method
 

Preparation
  1. Line an 8×8 pan with parchment paper, leaving some paper hanging over the sides.
  2. In a small pot on low heat, warm the honey and nut butter until smooth and pourable, being careful not to boil.
  3. Remove from heat and stir in vanilla and salt.
  4. In a bowl, combine old fashioned oats with the warm honey mixture and stir until all oats are coated.
  5. Let cool for a minute or two, then stir in chocolate chips or other mix-ins.
  6. Press the mixture firmly into the lined pan.
  7. Chill in the refrigerator for at least 1 to 2 hours before lifting out and slicing into bars.

Notes

Ensure to press the mixture tightly into the pan for the bars to hold together. Keep stored in a sealed container in the fridge for up to a week, or freeze individually for longer storage.
