  • 1.5 lbs Potatoes (mix of yellow and red, scrubbed and chopped) Leave skins on for texture.
  • 1 lbs Smoked sausage (thickly sliced) Can use smoked kielbasa or andouille for more flavor.
  • 2 cups Shredded cheese (cheddar recommended) More cheese makes for a silkier texture.
  • 1 packet Ranch dressing mix For flavor enhancement.
Optional Additions
  • pinch Red pepper flakes Add for spice.
  • 1/2 cup Chopped onions or bell peppers For added crunch.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped potatoes, sliced smoked sausage, ranch dressing mix, and half of the shredded cheese.
  3. Transfer the mixture to a baking dish, spreading it evenly.
  4. Top with the remaining shredded cheese.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and the cheese is bubbly.
  2. Stir halfway through baking for even cooking.
  3. Optional: Sprinkle a little extra ranch on top before serving.

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat in the microwave or oven for best results. This dish can be customized with different types of cheese or vegetables.
