For the cheese spread
  • 1 cup grated Parmesan cheese Freshly grated is recommended for better melting.
  • 1 cup shredded mozzarella Or use an Italian blend.
  • 3-4 pieces green onions, thinly sliced
  • 3/4 cup mayonnaise Can be substituted with cream cheese or thick Greek yogurt for variation.
  • 2 tablespoons softened butter Should be softened, not melted.
  • 1/2 teaspoon garlic powder
  • pinch red pepper flakes or black pepper Optional for added spice.
For the base
  • 1 loaf cocktail rye bread The small cocktail slices.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with foil or parchment for easy cleanup.
  2. In a bowl, mix together the mayonnaise, softened butter, Parmesan, mozzarella, green onions, garlic powder, and any optional pepper flakes.
  3. Lay the cocktail rye slices in a single layer on the baking sheet.
Baking
  1. Spoon a small mound of the cheese mixture onto each slice, ensuring not to overload them.
  2. Bake for 10 to 12 minutes until the tops are bubbly and the edges look toasty.
  3. For extra color, broil for 30 to 60 seconds but watch closely to prevent burning.
Serving
  1. Let the Parmesan Party Bread cool for about two minutes before serving so the topping sets a little.

Notes

For best results, prepare the cheese mixture a day in advance and refrigerate. Bake fresh just before serving. This dish pairs well with marinara, a fresh veggie tray, or chili.
