  • 1 lb Ground beef (lean or any) Use lean ground beef for a healthier option.
  • 1 medium Onion (optional) Adds flavor to the dish.
  • 2 cloves Garlic (fresh or jarred) Enhances the overall flavor.
  • 1.5 cups Uncooked white rice White rice is easiest here.
  • 2 cups Beef broth or water Broth provides more flavor.
  • 1 cup Tomato sauce or diced tomatoes Either works well.
  • 1 tbsp Paprika For added flavor.
  • 1 tbsp Italian seasoning Classic seasoning for casseroles.
  • To taste Salt and pepper For seasoning.
  • 2 cups Cheddar cheese For the cheesy topping.
  • 1 cup Mozzarella cheese (optional) For extra melt.

Method
 

Preparation
  1. Preheat your oven to 375 F and grease a 9x13 baking dish.
  2. In a large skillet, cook the ground beef over medium heat until browned. Add chopped onion if using, and drain excess grease.
  3. Stir in garlic and seasonings, cooking for about 30 seconds until fragrant.
  4. Add tomato sauce (or diced tomatoes) and broth to the skillet, then stir in the uncooked rice. Mix well.
  5. Pour the mixture into the greased baking dish and cover tightly with foil.
Baking
  1. Bake for 45 to 55 minutes or until the rice is tender.
  2. Remove foil, stir gently and sprinkle cheese on top.
  3. Bake uncovered for an additional 8 to 12 minutes until the cheese melts and is bubbly.
  4. Let it sit for 5 to 10 minutes before serving.

Notes

This casserole can be made ahead by preparing the beef earlier in the day or even mixing the whole dish and refrigerating. Store leftovers in an airtight container for 3 to 4 days or freeze for up to 2 months.
