Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1 tbsp vanilla extract
  • 1/2 cup melted butter
For the Topping
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup milk or evaporated milk
  • 1 cup shredded coconut optional
  • 1/2 cup chopped pecans optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 baking dish.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then mix in the milk, vanilla extract, and melted butter.
  4. Combine the wet and dry ingredients until just mixed; do not overmix.
Baking
  1. Pour the batter into the prepared baking dish and bake for about 30 minutes or until golden.
Topping
  1. While the cake is baking, in a saucepan over medium heat, combine the butter, brown sugar, and milk. Stir until blended and bring to a gentle boil.
  2. Remove from heat and add coconut and pecans, if using.
Finishing
  1. Once the cake is baked, immediately pour the topping over the hot cake.
  2. Let it soak in for a few minutes before serving.

Notes

Best served warm, but also delicious at room temperature. Pair with vanilla ice cream, whipped cream, or fresh berries for added delight.
