Ingredients
  

For the Pie Dough
  • 2 cups All purpose flour Flour should be chilled for best results.
  • 1/2 cup Cold butter, cut into small cubes Keep butter cold for flaky crust.

  • 1/2 teaspoon Salt Enhances the flavor.
  • 5-7 tablespoons Ice cold water Add gradually to bring dough together.
For the Apple Filling
  • 4 cups Peeled and diced apples Granny Smith or Honeycrisp recommended.
  • 2 tablespoons Butter For cooking apples.
  • 1/4 cup Brown sugar Adds sweetness and depth.
  • 1 teaspoon Cinnamon For warmth and flavor.
  • 1/8 teaspoon Salt Balances the sweetness.
  • 1 teaspoon Vanilla extract Adds aromatic flavor.
  • 1 tablespoon Flour or cornstarch To thicken the filling.
  • 1/2 cup Caramel sauce For drizzling into filling.
  • 12 pieces Small caramel candies Optional, for extra fun inside the pies.
For Assembling
  • 1 Egg Beaten For egg wash.
  • 1 tablespoon Coarse sugar For sprinkling on top.

Method
 

Make the Pie Dough
  1. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles crumbs.
  2. Gradually add ice cold water, mixing until the dough holds together. Divide into two discs, wrap in plastic, and chill for at least 30 minutes.
Prepare the Apple Filling
  1. Peel and dice apples into small pieces. Cook in a skillet with butter until tender.
  2. Add brown sugar, cinnamon, salt, vanilla, and flour. Stir to combine and remove from heat to cool.
  3. Once cool, drizzle caramel sauce into the filling and mix gently.
Assemble the Hand Pies
  1. Roll out the chilled dough and cut into circles. Place a spoonful of filling and a drizzle of caramel on half the circles.
  2. Top with another circle, seal with a fork, and vent the tops.
  3. Brush with egg wash and sprinkle with coarse sugar.
Bake the Hand Pies
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Bake for 20-25 minutes until golden brown. Let cool before serving.

Notes

Chill dough if it becomes sticky, avoid overfilling, and use parchment paper for easy cleanup. Pies can be made ahead and refrigerate for up to 24 hours or freeze unbaked.
