- Pour the cereal into the biggest bowl you own.
- In a microwave safe bowl, melt the white chocolate chips and peanut butter together, heating in 20 to 30 second intervals and stirring until smooth. Stir in the peppermint extract.
- Pour the warm chocolate mixture over the cereal and gently fold until most pieces are coated.
- Let the mixture sit for about 5 minutes to cool down, then transfer it to a large zip top bag or container. Add powdered sugar, seal, and shake until covered.
- Open the bag and sprinkle in the crushed candy canes, tossing gently to combine.
- Spread the mixture on a baking sheet and let it set for 10 to 15 minutes before serving.
Notes
To crush candy canes, place them in a zip-top bag, remove most of the air, and use a rolling pin to gently crush until you have small chunks. Avoid crushing too hard to prevent powder.
