Ingredients
  

For the fries
  • 4 large Russet potatoes Preferred for crispiness and fluffy texture.
  • 1 cup Cold water For soaking the cut potatoes.
  • 1 tablespoon Oil For tossing the fries before baking.
  • Oil For frying Use peanut oil, canola, or vegetable oil with a high smoke point.
Cajun seasoning mix
  • 1 tablespoon Paprika Smoky or regular, both work.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Cayenne pepper Use cautiously for heat.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 teaspoon Optional sugar Adds a hint of sweetness, common in fast food fries.

Method
 

Preparation
  1. Cut the Russet potatoes into fries.
  2. Soak the cut fries in a bowl of cold water with ice for 20-30 minutes.
  3. Drain and dry the fries thoroughly with towels.
Cooking
  1. Heat oil in a fryer to 350°F (175°C).
  2. Fry the potatoes in batches until light golden, then remove and let rest for a couple of minutes.
  3. Increase oil temperature to 375°F (190°C) and fry the potatoes again until deeply golden and crisp.
  4. Alternatively, for oven or air fryer, toss dried fries with a little oil and cook at high heat, flipping halfway.
Seasoning
  1. Immediately toss the hot fries with the Cajun seasoning for optimal flavor adherence.

Notes

For extra flavor, consider adding dried oregano or thyme to the seasoning mix. Serve fresh out of the fryer for the best texture.
