- In a big pot or Dutch oven, add ground beef and brown it over medium heat, breaking it up as it cooks.
- Once the meat is mostly cooked, stir in diced onion and cook for 3 to 5 minutes until softened.
- Add minced garlic and stir for about 30 seconds. If using lean meat, add a splash of oil if the pot seems dry.
- Incorporate the chopped cabbage into the pot. It may seem like a lot at first, but it will wilt down in 2 to 3 minutes.
- Pour in the diced tomatoes, tomato sauce, broth, paprika, oregano, salt, pepper, and optional brown sugar. Bring to a gentle boil, then lower to a simmer.
- Let simmer for about 20 to 30 minutes, until the cabbage is tender and flavors meld together.
- Stir in cooked rice at the end for fluffiness or add rinsed uncooked rice during simmering and cook until tender, usually 15 to 20 minutes.
Notes
Cut cabbage into spoon-friendly pieces and season in layers for the best flavor. Adjust sweet and sour balance as needed.
