Ingredients

Cheeseball Base
  • 8 oz Cream cheese, softened Full fat tastes best and shapes easier
  • 2 tbsp Butter, softened For richness and smoother texture
  • 1 cup Powdered sugar Adds sweetness without grit
  • 1 tsp Vanilla extract A small splash makes it taste like dessert
  • 1/2 cup Funfetti sprinkles Or pastel sprinkles for Easter vibes
  • 1/4 cup White chocolate chips Optional, but recommended
Decoration
  • 1 cup Shredded coconut For the bunny fur look on the outside
  • 1 large Marshmallow For the bunny tail
  • 2 tbsp Pink candy melts or pink frosting For the little paw pads
  • 2 mini Marshmallows or oval candies For bunny feet

Method

Preparation
  1. In a medium bowl, mix the softened cream cheese and butter until smooth.
  2. Add powdered sugar and vanilla, then mix again.
  3. Fold in sprinkles and white chocolate chips, being careful not to overmix.
  4. Cover the bowl and chill the mixture for at least 1 hour.
Shaping
  1. Scoop out most of the mixture and roll it into a ball for the bunny body.
  2. Take a smaller amount and form a second smaller ball for the 'butt' bump.
  3. Press the small one onto the big one.
  4. Roll the entire shape in shredded coconut and chill for another 15 minutes.
Decorating
  1. Add a large marshmallow as the tail, securing it with a dab of frosting.
  2. Place two mini marshmallows near the bottom for feet, adding pink candy melts or frosting for paw pads.

Notes

Keep the mixture cold to maintain shape. Use gloves or damp hands for shaping to prevent sticking. Adjust flavor by swapping in different mix-ins.
