Creamy, tangy, and just spicy enough, these Buffalo Chicken Roll-Ups are a perfect quick snack or appetizer that are easy to make and travel well. They are ideal for game days or potlucks.

Ingredients
  

Filling
  • 2 cups Cooked chicken, shredded or finely chopped Rotisserie chicken works best.
  • 8 ounces Cream cheese, softened Ensure it is at room temperature.
  • 1/2 cup Hot sauce Frank's RedHot is a good option.
  • 1 cup Shredded cheese, cheddar or cheddar blend
  • 1/4 cup Green onions or chives, chopped Optional, but adds great flavor.
Wraps
  • 4 large Tortillas Burrito size rolls work best.
Optional Extras
  • 1 tablespoon Ranch seasoning For added flavor.
  • 1/2 cup Diced celery Adds crunch, pat dry before adding.
  • 1/2 cup Blue cheese crumbles For those who love blue cheese.

Method
 

Preparation
  1. In a bowl, mix the softened cream cheese with hot sauce until smooth.
  2. Stir in the shredded chicken, cheese, and any additional ingredients you prefer.
  3. Spread the mixture evenly on each tortilla close to the edges.
  4. Roll the tortillas tightly like a jelly roll.
  5. Wrap the rolled tortillas in plastic wrap and chill for at least 1 hour.
Serving
  1. Slice the chilled roll-ups into pinwheels and serve cold.
  2. If the roll-ups have been in the fridge for hours, let them sit at room temperature for 10 minutes before serving.

Notes

Do not rush the chilling step for clean slices. Use a sharp serrated knife to slice the roll-ups. Try to avoid overfilling or large chunks of chicken to maintain the integrity of the roll-up.
