  • 1 large head large head of cauliflower cut into bite-sized florets
  • 1 cup all-purpose flour or gluten-free blend
  • 1 cup milk dairy or unsweetened plant milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika optional but tasty
  • 1/2 teaspoon salt plus more to taste
  • 1/2 to 3/4 cup buffalo sauce
  • 2 tablespoons melted butter or olive oil for a lighter option
  • as needed cooking spray or a little oil for the pan

Method
 

Preparation
  1. Set your oven to 450°F and line a large baking sheet with parchment paper. Optionally spray the parchment with cooking spray.
  2. In a large bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, and salt until smooth.
  3. Toss cauliflower florets in the batter until well coated and let excess batter drip off.
Baking
  1. Arrange the cauliflower on the prepared baking sheet in a single layer. Bake for 20 minutes.
  2. After 20 minutes, flip each piece of cauliflower and bake for an additional 10 to 15 minutes until browned and crisp.
  3. While baking, mix buffalo sauce with melted butter in a bowl.
  4. Remove cauliflower from the oven, toss gently in the buffalo sauce, then return to the oven for 8 to 10 minutes to set the sauce.

Notes

Best served hot right from the oven. For extra crunch, consider double baking. Store leftovers in an airtight container for up to 3 days. Reheat in the oven for best results.
