Preparation
- In a large bowl, combine creamy peanut butter, powdered sugar, softened butter, and vanilla extract until well mixed.
- Chill the mixture in the refrigerator for at least 20 minutes for easier handling.
- Once chilled, use a small cookie scoop to form the mixture into balls and place them on a parchment-lined tray.
Dipping
- Melt the chocolate in short bursts in the microwave, stirring often to prevent overheating.
- Once melted, dip each peanut butter ball in the chocolate, leaving a small circle of peanut butter showing on top for the classic look.
- Place the dipped bites back on the parchment-lined tray and let chocolate set.
Notes
Store in an airtight container; lasts at room temperature for 2 days, in the fridge for up to a week, or freeze for 2-3 months. Be sure to layer with parchment if stacking to prevent sticking.
