Ingredients
  

Filling
  • 1 cup Creamy peanut butter Use smooth for the best texture
  • 2 cups Powdered sugar Adjust amount for desired consistency
  • 1/4 cup Softened butter Salted is fine
  • 1 teaspoon Vanilla extract Optional, but adds flavor
Chocolate Coating
  • 2 cups Chocolate for dipping Use semi-sweet or dark chocolate
  • 1 teaspoon Coconut oil or shortening Optional, helps chocolate melt smoothly

Method
 

Preparation
  1. In a large bowl, combine creamy peanut butter, powdered sugar, softened butter, and vanilla extract until well mixed.
  2. Chill the mixture in the refrigerator for at least 20 minutes for easier handling.
  3. Once chilled, use a small cookie scoop to form the mixture into balls and place them on a parchment-lined tray.
Dipping
  1. Melt the chocolate in short bursts in the microwave, stirring often to prevent overheating.
  2. Once melted, dip each peanut butter ball in the chocolate, leaving a small circle of peanut butter showing on top for the classic look.
  3. Place the dipped bites back on the parchment-lined tray and let chocolate set.

Notes

Store in an airtight container; lasts at room temperature for 2 days, in the fridge for up to a week, or freeze for 2-3 months. Be sure to layer with parchment if stacking to prevent sticking.
