Preparation and Baking
- Preheat the oven to 400°F (200°C) and lightly oil a 9x13 baking dish.
- Pat the chicken dry with paper towels, season both sides with salt, pepper, and Italian seasoning. Place the chicken in the baking dish and drizzle with a bit of olive oil.
- Bake the chicken for about 18 to 22 minutes, until it reaches an internal temperature of 165°F (74°C). Adjust cooking time based on the thickness of chicken breasts.
Bruschetta Topping
- While the chicken is baking, combine diced tomatoes, minced garlic, chopped basil, a drizzle of olive oil, and a splash of balsamic vinegar in a bowl. Season with salt to taste.
Assembly and Final Baking
- Remove the chicken from the oven and spoon the tomato mixture over each piece, then top with mozzarella.
- Return to the oven for an additional 5 to 8 minutes, until the cheese is melted.
Serving
- Let it rest for 5 minutes before serving to keep the chicken juicy.
Notes
Use evenly sized chicken pieces for even cooking. If the tomato mixture appears watery, drain some liquid before topping the chicken. You can also add a sprinkle of parmesan cheese for extra flavor.
