Ingredients
  

For the Tomato Topping
  • 4 medium Fresh tomatoes Roma or vine ripe are great
  • 1 handful Fresh basil Chopped
  • 1-2 cloves Garlic Plus 1 clove for rubbing on bread
  • 2-3 tablespoons Extra virgin olive oil
  • to taste Salt
  • to taste Black pepper
  • splash Balsamic vinegar or balsamic glaze Optional
For the Bread
  • 1 loaf Baguette or rustic Italian loaf

Method
 

Preparation
  1. Chop tomatoes into small pieces.
  2. Add minced garlic, chopped basil, olive oil, salt, and pepper to the tomatoes. A splash of balsamic is optional.
  3. Let the tomato mixture sit for 10 to 15 minutes.
Toasting the Bread
  1. Slice bread about half an inch thick and brush lightly with olive oil.
  2. Toast at 400°F for about 8 to 10 minutes, flipping once. Optionally broil for 30 to 60 seconds for extra color.
  3. Rub the toasted bread with a cut clove of garlic while warm.
Serving
  1. Spoon the tomato topping onto the toasted bread right before serving.
  2. Optionally, top with fresh mozzarella or burrata for a creamy bite, or serve with prosciutto.

Notes

To keep the bread crisp, serve the topping in a bowl separate from the bread until ready to eat.
