Method
 

Preparation
  1. In a big pot, melt butter over medium heat. Add onion and carrots. Cook for 5 to 7 minutes until soft.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Pour in broth and bring it to a gentle simmer. Add broccoli.
  4. Simmer for 8 to 12 minutes until broccoli is tender.
  5. Turn the heat down low. Stir in milk and cream if using.
  6. Add cheddar a handful at a time, stirring until melted before adding more.
  7. Taste and season with salt and pepper. Done.
Notes
  1. Keep the heat low when adding dairy and cheese to prevent curdling.
  2. Grate cheddar fresh for the best melting and flavor.
  3. Avoid overcooking broccoli; it should be tender but not mushy.
