Ingredients
  

Dry Ingredients
  • 2 cups flour Regular or half whole wheat for extra nutrition
  • 1 scoop unflavored or vanilla protein powder Skip if it smells weird
  • 2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup cottage cheese or Greek yogurt Provides moisture and protein
  • 2 pieces eggs Large size preferred
Mix-ins
  • 1 cup shredded cheese Cheddar or any leftover cheese
  • 1/2 cup diced ham, turkey sausage, or chopped spinach Optional add-ins for added flavor

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the dry ingredients: flour, protein powder, baking powder, and salt.
  3. Make a well in the center and add the wet ingredients: cottage cheese and eggs. Stir until just combined.
  4. Fold in the shredded cheese and any optional mix-ins, being careful not to overmix.
Baking
  1. Dollop large spoonfuls of the mixture onto a baking tray sprayed with oil.
  2. Bake for 15-18 minutes or until the tops are lightly golden.
  3. Remove from the oven and let cool slightly before serving.

Notes

These biscuits can be stored in an airtight container in the fridge for up to five days or frozen for two months. Reheat in the microwave for 30 seconds or in a toaster oven.
