  • 1 cup Buttermilk Or milk plus a splash of vinegar or lemon
  • 1 cup All-purpose flour Plus a little cornstarch for extra crunch
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne pepper Optional for heat
  • 2 cups Oil For frying or cooking spray for baking or air frying
  • 1/4 cup Maple syrup or hot honey For drizzling
  • 1/4 cup Spicy mayo or honey mustard For dipping

Method
 

Preparation
  1. Season the chicken and the flour with salt, pepper, garlic powder, paprika, and cayenne.
  2. Soak the chicken in buttermilk for 15 to 30 minutes.
  3. For extra crunch, double dip the chicken by dipping it in flour, then buttermilk, and back into flour.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the chicken in batches, ensuring not to crowd the pan, until golden brown and cooked through.
  3. Remove chicken and let it rest on a paper towel-lined plate.
Assembly
  1. Toast the waffles until crispy.
  2. Layer the fried chicken between two waffles.
  3. Drizzle with syrup or your choice of sauce like spicy mayo.
Serving
  1. Serve the sandwiches warm with additional syrup, spicy mayo, and pickles on the side.

Notes

To keep the chicken crispy, let it rest for a couple of minutes before assembling. Consider offering various dips to enhance the flavors.
