Ingredients
  

Salad Ingredients
  • 6 cups fresh baby spinach Dried well to help dressing stick.
  • 1 cup fresh blueberries Pat dry if using thawed frozen blueberries.
  • 1 cup crumbled feta cheese Creamier if crumbled from a block.
  • 1/2 cup sliced almonds Can substitute with pecans or sunflower seeds.
Dressing Ingredients
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tbsp honey Can replace with maple syrup.
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Preparation
  1. In a large bowl, add the dried baby spinach.
  2. Top with fresh blueberries, crumbled feta, and sliced almonds.
  3. In a small jar, combine balsamic vinegar, olive oil, honey, salt, and black pepper. Shake to combine.
  4. Drizzle the dressing over the salad just before serving and toss gently to coat.

Notes

Keep spinach dry and store dressing separately until just before serving to maintain freshness. The salad is best eaten within 24 hours if dressed; undressed can be stored for up to 3 days.
