Main Ingredients
  • 2 cups Blueberries (fresh or frozen) Can use fresh or frozen blueberries.
  • 1 box Yellow cake mix You can also use white or lemon cake mix.
  • 1/2 cup Unsalted butter Thinly sliced and dotted over the top.
  • 1 teaspoon Lemon zest Optional, for extra flavor.
  • 1 tablespoon Sugar Optional, to toss with blueberries.
  • 1 teaspoon Ground cinnamon Optional, for sprinkling on top.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Spread the blueberries in an even layer in a baking dish.
  3. Toss the blueberries with sugar and lemon zest if using.
  4. Evenly sprinkle the dry cake mix over the blueberries without stirring.
  5. Carefully dot the sliced butter pieces over the top of the cake mix.
Baking
  1. Bake in the preheated oven for about 45 minutes, or until golden brown and bubbly.
  2. Let the cake cool for 10-15 minutes before serving.

Notes

Serve warm, optionally topped with vanilla ice cream or whipped cream. Leftovers can be stored in the fridge and reheated in the microwave.
