Preparation of Blueberry Mixture
- Put the blueberries, sugar, lemon juice, and salt in a small pan.
- Cook on medium heat for about 6 to 10 minutes, stirring often, until the berries burst and the mixture looks jammy.
- Let it cool completely to avoid melting the butter.
- Mash it a bit with a fork, or blend it if you prefer a smoother texture.
Mixing the Butter
- In a bowl, stir the softened butter until creamy.
- Mix in the cooled blueberry mixture until well combined.
Chilling
- Spoon the mixture onto plastic wrap or parchment, shape it into a log, and chill for at least 2 hours.
Notes
Store in the fridge for up to 1 week or freeze for about 2 months. Slice coins off the frozen log and let them soften on bread before serving.
