BLT Sandwich with Avocado

Ingredients
  

For the sandwich
  • 4 slices sourdough bread (or other preferred bread) Toast before assembly
  • 4 slices thick cut bacon Cooked until crisp
  • 1 cup crisp romaine lettuce Substitute with iceberg or spring mix if needed
  • 1 medium ripe tomato Use the ripest tomato available
  • 2 tablespoons mayonnaise Classic BLT style; optional to mix in lemon or garlic
  • to taste salt and pepper Especially on the tomato
Optional add-ons
  • 1 squeeze lemon juice For avocado
  • 1 swipe Dijon mustard Optional for extra flavor
  • 1 pinch chili flakes Optional for heat

Method
 

Preparation
  1. Cook the bacon: Pan fry or bake it until it’s crisp, usually at 400°F for about 15 to 20 minutes depending on thickness. Drain on paper towels.
  2. Toast the bread until light golden to hold everything together and prevent sogginess.
  3. Slice the tomato: Thick slices are best. Sprinkle with salt and pepper and let sit for a minute.
  4. Prepare the avocado: Slice or mash it with a pinch of salt and a tiny squeeze of lemon if desired.
  5. Spread mayonnaise on both slices of toast to serve as a moisture barrier.
  6. Layer the sandwich in the order: bread, mayo, lettuce, tomato, bacon, avocado, and top with remaining slice of bread.
  7. Press gently and slice the sandwich in half or cut into triangles.

Notes

If prepping in advance, keep cooked bacon in the fridge for up to 4 days. Assemble sandwich right before eating to avoid sogginess.
