  • 3 cups shredded cheese Cheddar, Monterey Jack, or a Mexican blend.
  • 2 cups cooked protein Shredded chicken, taco beef, or seasoned black beans.
  • 1 small onion, finely diced
  • 1 piece bell pepper, finely diced
  • 2 tablespoons taco seasoning Or your favorite spice blend.
  • 2 tablespoons butter or olive oil, melted For brushing on top before baking.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Warm the tortillas slightly in the microwave for about 20 seconds so they are flexible.
  3. Mix your filling: combine the shredded cheese, cooked protein, diced onion, diced bell pepper, and taco seasoning in a bowl.
  4. Taste and adjust the seasoning with salt as needed.
Assembly
  1. Arrange the tortillas around the baking sheet, overlapping them halfway to form a ring with a hole in the center.
  2. Spoon some filling onto each tortilla flap where they overlap, then fold each one inward to cover the filling and create a snug ring.
  3. Brush the tops of the tortillas with the melted butter or oil for added crispiness.
Baking
  1. Bake in the preheated oven for 15 to 18 minutes, until the edges are golden brown and the cheese is bubbling.
  2. If you prefer a deeper color, broil for an additional 1 to 2 minutes.
  3. Let the quesadilla ring rest for 3 to 5 minutes before sliding it onto a platter and adding dips in the center.
