Ingredients

Main Ingredients
  • 1 cup Unsalted butter, melted and slightly cooled
  • 1 cup Light or dark brown sugar Dark brown sugar gives a deeper flavor
  • 1 large Egg Plus 1 egg yolk for chewiness
  • 1 teaspoon Vanilla extract
  • 1 cup All purpose flour
  • 1 teaspoon Baking powder Do not overdo it
  • 1/2 teaspoon Salt A pinch more salt enhances sweetness
Mix Ins (optional)
  • 1 cup Chocolate chips Semi-sweet for a classic flavor
  • 1 cup White chocolate chips For a creamy flavor
  • 1 cup Chopped nuts Toasted walnuts or pecans optional
  • 1 cup Butterscotch chips Add for extra caramel flavor

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8-inch square pan with parchment paper, then lightly grease it.
  2. Melt the butter and let it cool for a few minutes so it's warm, not hot.
  3. In a bowl, whisk together melted butter and brown sugar until glossy and smooth.
  4. Whisk in the egg, then the extra yolk, followed by vanilla until thicker.
  5. Sprinkle in flour, baking powder, and salt. Stir gently until no dry flour remains.
  6. Fold in your mix-ins if using, then spread the batter evenly into the prepared pan.
Baking
  1. Bake in the preheated oven for about 20 to 26 minutes, until the edges are set and the center is not jiggly.
  2. Allow to cool completely before slicing for clean squares.

Notes

For best results, do not overmix, and watch the bake time closely. Blondies finish cooking as they cool, so pull them while still soft in the center.
