Preparation
- Preheat your Blackstone to medium heat around 375 to 400 degrees F for a few minutes.
- While it heats, pat the chicken dry with paper towels.
- Rub the chicken lightly with oil and sprinkle on salt, pepper, paprika, and garlic powder.
- If you have time, let it sit for 10 minutes at room temp for better seasoning adherence.
Sear and Cook
- Add a thin drizzle of oil to the hot griddle and place the chicken down, allowing it to sizzle.
- Cook for about 4 to 6 minutes per side, depending on thickness, without moving it too much.
- Flip the chicken once it's nicely browned and releases easily from the griddle.
- For thicker pieces, cover with a steam dome or metal bowl to speed cooking.
Glaze and Rest
- Mix BBQ sauce with honey and vinegar if using, and brush on chicken in the last 2 minutes.
- Aim for an internal temperature of 165 degrees F.
- Remove chicken from the griddle and allow to rest for 5 minutes before slicing.
Notes
Leftovers make amazing sandwiches. You can slice the chicken and pile it on toasted buns with extra sauce and cheese. For a bowl style option, serve with rice, corn, and avocado.
