Ingredients
  

The Chicken
  • 2 pounds boneless, skinless chicken breasts or thighs, trimmed Use thighs for juiciness or breasts for leaner options.
  • 1 to 2 tablespoons avocado or canola oil for rubbing Oil helps to achieve a nice sear.
  • 1 teaspoon kosher salt Adjust to taste.
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika or regular paprika For a smoky flavor.
  • pinch garlic powder
The Glaze
  • 1/2 to 3/4 cup your favorite BBQ sauce Choose a sauce you love.
  • 1 tablespoon honey or brown sugar for extra gloss, optional Adds a nice shine.
  • 1 teaspoon apple cider vinegar for brightness, optional Enhances flavor.

Method
 

Preparation
  1. Preheat your Blackstone to medium heat around 375 to 400 degrees F for a few minutes.
  2. While it heats, pat the chicken dry with paper towels.
  3. Rub the chicken lightly with oil and sprinkle on salt, pepper, paprika, and garlic powder.
  4. If you have time, let it sit for 10 minutes at room temp for better seasoning adherence.
Sear and Cook
  1. Add a thin drizzle of oil to the hot griddle and place the chicken down, allowing it to sizzle.
  2. Cook for about 4 to 6 minutes per side, depending on thickness, without moving it too much.
  3. Flip the chicken once it's nicely browned and releases easily from the griddle.
  4. For thicker pieces, cover with a steam dome or metal bowl to speed cooking.
Glaze and Rest
  1. Mix BBQ sauce with honey and vinegar if using, and brush on chicken in the last 2 minutes.
  2. Aim for an internal temperature of 165 degrees F.
  3. Remove chicken from the griddle and allow to rest for 5 minutes before slicing.

Notes

Leftovers make amazing sandwiches. You can slice the chicken and pile it on toasted buns with extra sauce and cheese. For a bowl style option, serve with rice, corn, and avocado.
