Main Ingredients
  • 1 lb smoked sausage, sliced Kielbasa or chorizo can also be used.
  • 1 can black beans, drained Canned for speed.
  • 1 cup white rice Can substitute with brown rice (adjust cooking time).
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broth (chicken or vegetable) Use what’s available in the pantry.
Spices
  • 1 tbsp cumin
  • 1 tbsp paprika
  • to taste salt and pepper
Optional Toppings
  • 1 cup cheese, shredded Highly recommended.
  • 1/2 cup cilantro, chopped For garnish.
  • 1 sour cream For serving.
  • 1 avocado, sliced For serving.
  • 1 cup tortilla chips For serving.

Method
 

Preparation
  1. Chop the sausage into thick slices.
  2. In a big pot, brown the sausage until edges are crispy.
  3. Add chopped onion and garlic, cooking until fragrant.
Cooking
  1. Add drained black beans and rice to the pot, stirring to combine with the sausage.
  2. Pour in the broth and season with cumin, paprika, salt, and pepper.
  3. Cover the pot and simmer for about 20 minutes, stirring occasionally, until the rice is cooked.
  4. Taste and adjust seasoning if necessary before serving.

Notes

This dish reheats well, making it great for leftovers. Variations can include different types of sausage, beans, or spices to suit your taste.
