  • 1 pound Breakfast sausage Mild or spicy, pork or turkey based on preference.
  • 2 tablespoons Butter For richness in the gravy.
  • 1/4 cup All-purpose flour To thicken the gravy.
  • 2 cups Milk Whole milk preferred for creaminess, but 2% works fine.
  • to taste Salt For seasoning.
  • to taste Black pepper Essential for flavor.
  • a pinch Garlic powder For seasoning.
  • 1 cup Shredded cheddar cheese Optional, for adding cheese flavor.
  • 1/4 cup Chopped green onions Optional, for garnish.
  • to taste Red pepper flakes Optional, for a spicy kick.

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish with butter or nonstick spray.
  2. Cut each biscuit into quarters and set aside.
Making the Sausage Gravy
  1. In a large skillet over medium heat, brown the sausage, breaking it up as it cooks until well browned.
  2. Stir in a tablespoon of butter and sprinkle the flour over the sausage, stirring for about one minute.
  3. Slowly pour in the milk while whisking, and cook until thickened. Season generously with salt, black pepper, and garlic powder.
Assembly and Baking
  1. Scatter the biscuit pieces evenly across the greased baking dish.
  2. Pour the hot sausage gravy over the biscuit pieces ensuring it settles between them.
  3. If using cheese, sprinkle it over the top now.
  4. Bake for 22 to 28 minutes, until biscuits are puffed and the top is golden.
  5. Let it rest for 5 to 10 minutes before serving to help the gravy set.

Notes

For perfect results, do not skimp on seasoning and let the gravy thicken before baking. Optional toppings such as cheddar or biscuit pieces can be added in the last baking minutes for extra texture.
