Ingredients
  

For the cookies
  • 1 cup all-purpose flour Make sure to measure correctly.
  • 1/2 cup brown sugar Packed brown sugar for sweetness.
  • 1/2 teaspoon ground cinnamon Key ingredient for flavor.
  • 1/2 cup unsalted butter, melted Softened for easier mixing.
  • 1/4 cup golden syrup Can substitute with maple syrup in a pinch.
For the filling
  • 1 cup Biscoff cookie butter Warm slightly for easier spreading.

Method
 

Preparation
  1. In a large bowl, combine flour, brown sugar, and cinnamon.
  2. Melt the butter and add the golden syrup to the mixture.
  3. Mix until the mixture resembles damp sand.
  4. Scoop out dough, roll into balls, and flatten slightly. Don't worry about the shape.
Baking
  1. Preheat your oven and bake cookies until the edges start to brown, about 10 minutes.
  2. Let the cookies cool completely.
Assembly
  1. Spread a thick layer of cookie butter on one cookie and sandwich with another.
  2. Press gently to ensure the filling oozes out a little.

Notes

Store cookies in a sealed container to keep them fresh. They freeze well too! Consider applying variations with different cookie butters.
