Main ingredients
  • 2 cups Birria meat, shredded beef or goat Use leftovers if available
  • 1 cup Consome, the broth from the birria For dipping
  • 4 slices Bread, thick sliced white bread, sourdough, or bolillo Sliced lengthwise
  • 1 cup Cheese, Oaxaca, mozzarella, Monterey Jack, or a blend Mix melty cheese with something punchy like cheddar
  • 2 tablespoons Butter or mayo For crisping the outside
Optional extras
  • 1/4 cup Chopped onion For garnish
  • 1/4 cup Chopped cilantro For garnish
  • 1 squeeze Lime For garnish
  • 1/4 cup Pickled jalapenos For garnish

Method
 

Preparation
  1. Warm the birria meat with a splash of consome to keep it juicy.
  2. Heat a skillet over medium heat.
  3. Lightly butter or mayo the outside of your bread.
Cooking
  1. Add bread to the skillet, then pile on cheese, followed by birria, more cheese, and top with another slice of bread.
  2. Press the sandwich down lightly, then flip when golden. Cook until both sides are crispy and the cheese is fully melted.
  3. Serve with a bowl of hot consome for dipping.

Notes

Keep the meat juicy by reheating with a bit of consome. Avoid overstuffing the sandwich to prevent a skillet explosion. Serve immediately to maintain crispiness.
