Ingredients
  

Main Ingredients
  • 2 cups cooked rice or quinoa Warm base.
  • 1 lb rotisserie chicken Shredded and warmed.
  • 1 cup barbecue sauce For tossing with chicken.
  • 1 cup corn Frozen or fresh, as a topping.
  • 1 cup slaw For crunch.
  • 1 lime For squeezing over each bowl.
  • 1 cups assorted toppings JalapeƱos, pickled onions, cheese, etc.

Method
 

Preparation
  1. Warm the rice or quinoa in the microwave or on the stove.
  2. Shred the rotisserie chicken and warm it gently with a splash of broth.
  3. Toss the warm chicken with barbecue sauce, coating lightly.
Building the Bowl
  1. Layer warm rice or quinoa at the bottom of each bowl.
  2. Add a generous portion of the sauced barbecue chicken on top.
  3. Top with corn, slaw, and additional toppings of your choice.
  4. Squeeze fresh lime juice over the bowl for extra flavor.

Notes
