Ingredients
  

For the Sausages
  • 4 pieces pork or chicken sausages Pork is traditional, but chicken or turkey works too.
For the Mash
  • 2 pounds Yukon gold or russet potatoes Cut into similar sized chunks for even cooking.
  • 1/2 cup butter Use unsalted for controlled seasoning.
  • 1/2 cup milk Warm milk is recommended for smooth texture.
For the Gravy
  • 1 large onion, sliced Cooking onions first helps develop flavor.
  • 2 tablespoons all-purpose flour For thickening the gravy.
  • 2 cups beef or chicken broth
  • 1 teaspoon Worcestershire sauce Optional but adds depth to the gravy.
Seasoning
  • to taste salt and pepper Use liberally to enhance flavors.

Method
 

Preparation
  1. Slice the onion and start cooking it in a pan with butter or oil over low heat, stirring occasionally for 10-15 minutes until soft.
  2. Peel and cut the potatoes into similar sized chunks and boil in salted water until fork-tender.
Cooking
  1. In a separate pan, brown the sausages over medium heat, then lower the heat to cook through gently.
  2. Once the onions are soft, sprinkle flour over them and stir for a minute.
  3. Gradually add the broth while stirring continuously until the gravy thickens.
  4. Mash the drained potatoes with butter and warm milk until creamy. Season with salt and pepper.
Serving
  1. Serve the sausages over a mound of mashed potatoes, topped with onion gravy.
  2. Add optional vegetables like peas or carrots on the side for a complete meal.

Notes

If the sausages split, lower the heat to cook them gently. For smooth mash, don’t overmix and use warm milk. A splash of Worcestershire sauce can elevate the gravy's flavor.
