Ingredients
  

For the chicken
  • 1 lb chicken breast or thighs Chopped into bite-sized pieces
  • 1/4 cup cornstarch For crispy texture
  • 2 tablespoons oil For frying
For the bang bang sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha Adjust for spice preference
  • 1 tablespoon honey Optional for sweetness
Toppings
  • 1/4 cup chopped green onions
  • 2 tablespoons sesame seeds or peanuts Optional, for garnish
Base
  • 2 cups rice or salad greens Can also use quinoa

Method
 

Preparation
  1. Chop chicken into bite-sized pieces.
  2. Toss the chicken in cornstarch.
Cooking
  1. Heat oil in a pan over high heat.
  2. Fry the chicken until golden brown.
Make the sauce
  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey.
  2. Taste and adjust the ingredients as necessary.
Assembly
  1. Dump the cooked chicken onto the rice or greens.
  2. Pour on the bang bang sauce and top with garnishes.

Notes

For meal prep, store chicken and sauce separately in the fridge for up to 3 days. Reheat chicken separately to preserve crispiness.
