Ingredients
  

Main Ingredients
  • 2 medium overripe bananas The riper, the better for flavor
  • 1 cup white chocolate chips These melt smooth and play nicely with banana
  • 1 can sweetened condensed milk Makes it rich and helps it set
  • 2 tablespoons butter For silkiness and flavor
  • 1 teaspoon vanilla extract Makes the banana taste rounder and warmer
  • 1 pinch salt Keeps the sweetness from feeling flat
Optional Mix-ins
  • 1/2 cup chopped walnuts For adding crunch
  • 1/2 cup mini chocolate chips For a chocolate twist
  • 1 teaspoon ground cinnamon Light sprinkle for flavor

Method
 

Preparation
  1. Line an 8-inch square pan with parchment paper, leaving a little overhang.
  2. Mash the bananas really well until mostly smooth with a few tiny lumps.
Cooking
  1. In a saucepan on low heat, add butter and sweetened condensed milk. Stir until the butter melts.
  2. Add the mashed bananas and stir for a couple of minutes to warm through and blend.
  3. Add white chocolate chips and stir constantly until fully melted and smooth.
  4. Turn off the heat and stir in vanilla extract and a pinch of salt.
Setting
  1. Pour the mixture into the lined pan and smooth the top.
  2. Chill for at least 4 hours, preferably overnight for clean slices.
  3. Once set, lift it from the pan using the parchment and slice into small squares.

Notes

Store in the fridge for 5-7 days. Use very ripe bananas for the best flavor, and keep the heat low to avoid graininess in the fudge. For clean cuts, run your knife under hot water before slicing.
