Main Ingredients
  • 3 medium ripe bananas Spotty and soft for optimal sweetness.
  • 1/2 cup melted unsalted butter Use melted for the batter.
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 eggs Room temperature recommended.
  • 2 cups all-purpose flour Spoon and level to avoid packing.
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 cup mini chocolate chips or chopped nuts Optional add-ins.
Glaze
  • 1 cup powdered sugar
  • 1-2 tablespoons milk or cream Adjust for desired consistency.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch pan with parchment paper, lightly greasing the sides.
  2. In a large bowl, mash the ripe bananas until smooth, leaving a few lumps if desired.
  3. Whisk in the melted butter, granulated sugar, and brown sugar until glossy.
  4. Add eggs and vanilla extract, whisking until creamy.
Mix Dry Ingredients
  1. Sprinkle flour, baking powder, baking soda, and salt over the wet mixture and gently fold until combined. Fold in any add-ins like chocolate chips or nuts.
Baking
  1. Spread the batter into the prepared pan and bake for 20-25 minutes, or until the top is set and a toothpick comes out with moist crumbs.
Glaze
  1. Allow the bars to cool for 15 minutes. Meanwhile, whisk together the powdered sugar, milk, and vanilla for the glaze.
  2. Drizzle the glaze over the warm bars and let it set before cutting into squares.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to 5 days or freeze for 2 months.
