  • 20 oz canned pineapple chunks Drain well but retain some juice
  • 8 oz crushed pineapple Keeps the casserole saucy
  • 1 cup sugar Brings out sweetness
  • 1 tbsp all purpose flour Thickens the filling
  • 1 cup shredded cheddar cheese Adds a salty bite
For the topping
  • 1 pkg buttery round crackers Classic crunchy topping
  • 4 tbsp butter Melted to mix with the crackers

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly butter a baking dish.
  2. In a big bowl, stir together the drained pineapple chunks and the crushed pineapple.
  3. Add sugar and flour, mixing until there are no dry flour patches visible.
  4. Stir in the shredded cheddar cheese.
  5. Pour the pineapple mixture into the baking dish and spread it evenly.
Topping
  1. Crush the buttery crackers in a bowl, aiming for a mix of fine crumbs and larger bits.
  2. Pour in melted butter and stir until the crumbs are evenly coated.
  3. Sprinkle the cracker topping over the pineapple mixture.
Baking
  1. Bake for 25 to 35 minutes until the top is golden and the edges are bubbly.
  2. Let it sit for 10 minutes before scooping to help it thicken.

Notes

For the best results, drain the pineapple properly and let the casserole rest after baking to set the filling. Use real butter for better flavor and browning.
