  • 1 can (20 oz) crushed pineapple Drained, with juice reserved
  • 1 cup sharp cheddar cheese Shredded
  • 1 cup sugar Adjust to taste
  • 1 cup Ritz crackers Crushed, for topping
  • 1/2 cup butter Melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the drained crushed pineapple, sugar, and sharp cheddar cheese.
  3. Pour in the reserved pineapple juice and mix well.
Baking
  1. Transfer the mixture to a greased baking dish.
  2. In a separate bowl, mix the crushed Ritz crackers with melted butter.
  3. Spread the Ritz cracker mixture over the pineapple mixture.
  4. Bake for 30 minutes or until the topping is golden brown and the cheese is bubbly.
  5. Let it sit for a few minutes before serving to allow flavors to settle.

Notes

Serve it next to baked ham, at brunch with eggs, or chilled as a quick snack. Consider adding nuts for crunch or coconut for a tropical twist. Adjust sugar to control sweetness.
