  • 2 cups rolled oats, old-fashioned, not quick or steel-cut
  • 2 ripe bananas, mashed well The riper, the better for sweetness
  • 1.5 cups blueberries, fresh or frozen No need to thaw if using frozen
  • 2 cups milk, dairy or dairy-free Substitute with almond, oat, or coconut milk if desired
  • 2 large eggs Can substitute with 2 flax eggs for an egg-free version
  • 1/3 cup maple syrup or honey Adjust sweetening according to banana ripeness
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 2 tablespoons melted butter or coconut oil
  • 1 pinch salt
Optional Toppings
  • 1/2 cup chopped nuts or seeds Use for topping, optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and lightly grease an 8x8 or 9x9 inch baking dish with butter or coconut oil. Optionally line with parchment paper for easy lifting.
  2. In a large mixing bowl, mash the bananas until mostly smooth, then whisk in eggs, milk, maple syrup, vanilla extract, melted butter or oil, cinnamon, baking powder, and a pinch of salt.
  3. Stir in the rolled oats until well coated. Gently fold in blueberries and pour the mixture into the baking dish, smoothing the top.
  4. If desired, sprinkle chopped nuts on top.
Baking
  1. Bake for 35 to 40 minutes until the center feels set and the edges are golden. It’s okay if it appears slightly jiggly, as it will continue to set while cooling.
Serving
  1. Allow the baked oatmeal to rest for 10 minutes before slicing into squares. Serve warm with yogurt, a drizzle of maple syrup, or a splash of milk.
