Ingredients
  

For the donuts
  • 1 cup apple cider Reduce to about 1/2 cup
  • 2 cups all-purpose flour Can substitute with part whole wheat
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar Granulated sugar
  • 2 teaspoons apple pie spice
  • 1/2 cup butter Melted
  • 2 eggs Large eggs
  • 1/4 cup milk or yogurt For added moisture
  • 1 teaspoon vanilla extract
For the coating
  • 1/4 cup cinnamon sugar For rolling after baking

Preparation
  1. Reduce the apple cider in a small pot over medium heat until it reduces to about 1/2 cup. Let it cool for a few minutes.
  2. In a large bowl, whisk together the flour, baking powder, salt, sugar, and apple pie spice.
  3. In another bowl, mix the melted butter, eggs, milk or yogurt, vanilla extract, and the reduced cider.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Grease the donut pan well and fill each cavity about 3/4 full with the batter.
  6. Bake in a preheated oven at 350°F (175°C) for about 15 minutes or until lightly golden and springy to touch.
  7. Let the donuts cool for a few minutes, then toss in cinnamon sugar or brush with melted butter before coating in the sugar.

Notes

These donuts can be frozen without the topping and thawed before adding the coating. They are best enjoyed fresh on the day they are made but can be stored in an airtight container.
