- Season the pork with salt, pepper, garlic powder, smoked paprika, and a little brown sugar or Dijon mustard if desired.
- Wrap the pork tenderloin tightly in overlapping bacon slices and secure with kitchen twine or toothpicks.
- Optional: Sear the wrapped tenderloin in an oven-safe skillet for a couple of minutes per side if you desire extra browning.
Cooking
- Place the pork in the oven and roast until the internal temperature reaches 145°F (63°C), about 20 to 30 minutes.
- Let the pork rest for 8 to 10 minutes before slicing into medallions.
Notes
For variations, you can brush the bacon with a brown sugar and vinegar mixture, or use herbs like rosemary or thyme for added flavor. Store leftovers in the fridge for 3 to 4 days.
