Ingredients

Main Ingredients
  • 1 pound Boneless skinless chicken breasts or thighs, cut into bite-size chunks Thighs stay juicier.
  • 8 slices Bacon, cut in half Use regular cut; thick cut will take longer to cook.
  • 1/2 cup Teriyaki sauce (homemade or store-bought) Brush on lightly before baking.
  • to taste Sesame seeds, green onions, sriracha (for heat) Optional garnish.

Method

Preparation
  1. Heat your oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup, adding a rack if available.
  2. Cut the chicken into about 1-inch pieces, ensuring they are similar in size. Wrap each piece of chicken with half a slice of bacon and secure with a toothpick.
Cooking
  1. Brush the tops of the bacon-wrapped chicken with teriyaki sauce, but do not drown them, to prevent burnt sugar.
  2. Bake for about 20 to 25 minutes, then flip and brush with more sauce. Bake for an additional 10 to 15 minutes, until the chicken is cooked through and the bacon is crisp.
  3. For a glossy finish, brush another thin layer of teriyaki sauce during the last few minutes of baking. Sprinkle sesame seeds and green onions right before serving.

Notes

These chicken bites can be made in advance and refrigerated for up to 24 hours before baking. They store well in the fridge for up to 3 days after cooking.
