Preparation
- Cook the bacon until crisp, then let it cool and chop it.
- Soften the cream cheese for 20 to 30 minutes at room temperature or microwave in short bursts until soft, but not melted.
- In a bowl, stir together the cream cheese, sour cream, and ranch seasoning. Add garlic powder and pepper if desired.
- Fold in most of the cheddar cheese and bacon, reserving a little for topping.
Baking
- Spread the mixture into a small baking dish and top with the reserved cheddar and bacon.
- Bake at 375°F (190°C) for 15 to 20 minutes until hot and bubbly.
- Sprinkle chopped green onions or chives on top and let cool for a few minutes before serving.
Notes
For a quicker option, warm in a skillet on low heat, stirring often. If too thick after baking, stir in a spoonful of sour cream; if too loose, add more cheddar and bake longer.
