Preparation
- Cook the bacon in a skillet until crisp. Drain on paper towels.
- Mash avocado with a pinch of salt and pepper, adding a squeeze of lime if desired.
Assembly
- Spread butter or mayo on the outside of each bread slice.
- On the inside of the bread, layer with cheese first, then bacon, followed by a thin layer of guacamole, and add a little more cheese on top.
Grilling
- Heat a nonstick pan or skillet on medium to medium-low heat.
- Place the sandwich in the pan and press gently with a spatula. Cook for 3 to 4 minutes per side until golden and the cheese is fully melted.
Serving
- Let the sandwich rest for one minute before slicing to prevent the guac from spilling out.
Notes
For a spicy variation, use pepper jack cheese or add sliced jalapeƱos. For a breakfast vibe, add a fried egg. Keep guacamole thin to avoid sogginess.
