Ingredients
  

For the Sandwich
  • 2 slices slices of bread (sourdough, thick white, or Texas toast style)
  • 2 to 3 slices slices of cooked bacon Cooked until crisp
  • 1/2 avocado ripe avocado (or about 1/3 cup guacamole) Mashed for guacamole layer
  • 1/2 cup shredded cheese or 2 to 3 slices cheese (cheddar, Monterey Jack, pepper jack, or a mix) A mix melts best
  • 1 to 2 teaspoons butter or mayo for the outside of the bread
  • 1 pinch salt
  • 1 pinch pepper
  • 1 optional squeeze squeeze of lime For guacamole flavor
  • 1 pinch red pepper flakes Optional for added spice

Method
 

Preparation
  1. Cook the bacon in a skillet until crisp. Drain on paper towels.
  2. Mash avocado with a pinch of salt and pepper, adding a squeeze of lime if desired.
Assembly
  1. Spread butter or mayo on the outside of each bread slice.
  2. On the inside of the bread, layer with cheese first, then bacon, followed by a thin layer of guacamole, and add a little more cheese on top.
Grilling
  1. Heat a nonstick pan or skillet on medium to medium-low heat.
  2. Place the sandwich in the pan and press gently with a spatula. Cook for 3 to 4 minutes per side until golden and the cheese is fully melted.
Serving
  1. Let the sandwich rest for one minute before slicing to prevent the guac from spilling out.

Notes

For a spicy variation, use pepper jack cheese or add sliced jalapeƱos. For a breakfast vibe, add a fried egg. Keep guacamole thin to avoid sogginess.
