Ingredients
  

Main ingredients
  • 24 pieces Buttery crackers (Club crackers or similar) These hold up best.
  • 12 slices Regular cut bacon Cut into thirds or quarters as needed.
  • 0.5 cup Brown sugar Light or dark; dark gives a deeper caramel flavor.
  • to taste Black pepper (optional) Adds a nice bite.
  • to taste Cayenne or chili flakes (optional) For a sweet heat.

Method
 

Preparation
  1. Preheat the oven to 250°F (120°C) and line a rimmed baking sheet with foil.
  2. If using, place a wire rack on top of the baking sheet.
  3. Cut the bacon into thirds and lay out the crackers in a single layer on the baking sheet.
Assembly
  1. Put a small pinch of brown sugar on each cracker.
  2. Top each cracker with a piece of bacon and finish with another small pinch of brown sugar on top of the bacon.
  3. Sprinkle a little black pepper if desired.
Baking
  1. Bake in the preheated oven for 60 to 90 minutes, checking around the 60-minute mark.
  2. Look for browned and crisp bacon with melted glossy sugar.
  3. Let cool for 5 to 10 minutes before serving.

Notes

For the best results, do not raise the oven temperature, use a light hand with sugar, and allow to cool to set properly. They can be reheated at 300°F (150°C) to restore crunchiness if made ahead.
