Preparation
- Preheat the oven to 250°F (120°C) and line a rimmed baking sheet with foil.
- If using, place a wire rack on top of the baking sheet.
- Cut the bacon into thirds and lay out the crackers in a single layer on the baking sheet.
Assembly
- Put a small pinch of brown sugar on each cracker.
- Top each cracker with a piece of bacon and finish with another small pinch of brown sugar on top of the bacon.
- Sprinkle a little black pepper if desired.
Baking
- Bake in the preheated oven for 60 to 90 minutes, checking around the 60-minute mark.
- Look for browned and crisp bacon with melted glossy sugar.
- Let cool for 5 to 10 minutes before serving.
Notes
For the best results, do not raise the oven temperature, use a light hand with sugar, and allow to cool to set properly. They can be reheated at 300°F (150°C) to restore crunchiness if made ahead.
